5 Minute Quickie Vegan Ramen Bowl

Yummy and easy!

It’s been a minute since college, but I am still a fan of the quick and easy (plus super cheap!) meal that fills everyone up and is delicious at the same time.

Yes, I am talking Ramen!

My kids absolutely love this stuff! I think partly because they don’t need mom and dad and can do it all themselves. Now, if only they had that mentality around daily chores. Sigh.

There are definitely more healthy noodle options than Ramen that don’t have the added preservatives so if you want the organic, healthy stuff use that instead!

My husband and I totally geek out about this dish because one of our favorite restaurants has a menu full of Ramen Bowl options that are completely mouthwatering and life-changing! Those dinners were the inspiration behind this favorite family recipe.

Because of our date nights filled with dishes like Spicy Creamy Vegan Ramen and Spicy Chicken Ramen, we have been in the kitchen experimenting with a twist on our perfected recipe.

I couldn’t help but share it with you!

The reason I love this quick and easy dish is because I can personalize each meal with everybody’s favorites without too much hassle. I can also add in some hidden veggies that no one minds being included since they are too busy slurping down the delicious broth!

The flavors you can use here are endless but I am going to provide you with a few alterations and suggestions for different pallets. Feel free to include your favorite spices, veggies, and proteins!

Our family has been on the plant-based lifestyle track for a while, but feel free to include what works best for you and your family.

I used a few different plant-based alternatives that I love, including a vegan chipotle sausage that gives it an extra kick, which I think makes the broth even yummier!

You can switch up the vegetable broth for something creamier and more filling, like Thai coconut flavors depending on how much time you have.

The ideas for a Ramen Bowl are endless!

5 Minute Quickie Vegan Ramen Bowl

A restaurant quality quickie version of the infamous Ramen bowl. Filled with protein and delicious broth!
Cook Time 5 minutes
Course Main Course, Snack, Soup
Servings 1

Ingredients
  

  • 1 package cooked Ramen noodles (remove packet)
  • 1 cup vegetable broth
  • 1/4 cup steamed Edamame
  • 1/4 cup spinach
  • 2 tbsp chopped green onion
  • 1/2 cup cooked / fried tofu
  • 1/3 cup vegan chipotle sausage
  • 2 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1 tsp toasted sesame seeds
  • 1 tsp Sriracha

Instructions
 

  • Cook Ramen noodles according to package. Drain. Steam edamame package in microwave.
  • Cook vegan chipotle sausage according to instructions in sesame oil. Cook tofu as desired and add to sausage.
  • Boil vegetable broth. Pour over cooked noodles. Add soy sauce. Stir.
  • Add proteins including oil (edamame, sausage, and tofu), green onion and spinach.
  • Top with sesame seeds and sriracha. Let broth sit for as long as you can stand it. Enjoy!
