10 Minute Meatless Sheet Pan Nachos

As we have been moving toward a plant based lifestyle, it has been clutch to have easy peasy, “just throw it together” type of meals.

Especially as football has heated up and my bigs have practice every. single. night. They come home HUNGRY. And they are not craving salad and tofu. They want hearty, filling, carb-filled dishes. And it better be ready when they are coming in HOT at 8:30PM.

It seems like in this season we are all eating at different times. I am an on the go Plexus shake and gut health supplement lover because I care a lot about what I put in my body and I’m always running around from place to place.

Cameron, the toddler, eats early and often. He is a toddler to a T so sometimes he wants seconds of what I’m making and sometimes he wants nothing to do with it. So I make his options simple and nutritious. A great multivitamin / probiotic makes this momma worry free about him getting everything he needs.

And my other three “boys” need a really good dinner. This includes Coach Daddy who grew up on steak and potatoes. Delicious, hot, hearty and filling. Good food makes their hearts beat faster. The person who coined the phrase “the way to a man’s heart is through his stomach” had some serious truth telling. I can certainly tell when dinner is a hit. The easy smiles, good conversation and laughter during a good meal is all I need to see to know I’m doing something right.

Everyone feels better when the hangry monster is gone.

This recipe is something that my husband actually gave me the idea for. He always has great ideas that one. He used to be the cook of the family and now that I’m home I am slowly (turtle’s pace) catching up to his ease in the kitchen. He and the boys LOVE nachos so I guess he was feeling a bit nostalgic when he suggested a meatless nacho meal.

This recipe idea is amazing for all sorts of reasons.

First off, it takes about 10 minutes. So there’s really no excuse not to have something really yummy, hot and filling that feels like your family just sat down at a restaurant to eat.

You can make it look and feel fancy with your toppings and presentation if you are looking to impress. If you don’t have that kind of time, just put the sheet pan right in front of them! *That’s what I did!*

You can also adjust the toppings with whatever your family loves. It’s super easy to customize for some of your picky eaters – just leave off what they don’t like!

For the plant based rockstars or meatless curious folks, you can either cook some Beyond Ground “Beef” or use extra beans! I did both black beans and refried.

If you are completely vegan, you can switch the cheese and sour cream to vegan replacements. I have not yet found ones that I love so PLEASE leave in the comments if you have good ones!

10 Minute Meatless Sheet Pan Nachos

Cook Time 7 minutes

Ingredients
  

  • 10-12 oz bag Favorite Tortilla Chips
  • 1 1/2 cup shredded Mexican cheese
  • 1-2 can black beans drained and rinsed
  • 1 can corn drained and rinsed
  • 1 pack Taco Seasoning
  • 2 tsp olive oil

Optional Toppings

  • 2 tomatoes – chopped
  • 1/2 red onion – chopped
  • 1-2 jalapeños – sliced
  • parsley or cilantro
  • sour cream
  • cheese dip

Instructions
 

  • Pre-heat oven to 400 degrees F.
  • Spread the tortillas around the baking sheet
  • Sprinkle with shredded cheese
  • In a bowl, mix together the black beans, corn, taco seasoning and oil.
  • Spread the black beans and corn out over the chips and cheese.
  • Bake for 8-10 minutes, or until the cheese is melted.
  • Add on the toppings of your choice! Go nuts! Enjoy warm!
