Superfood Black Bean & Quinoa Salad

It is timeless, so easy to make, extremely good for you and can easily be doubled or tripled for meal prep/lunches or as a perfect side item. Since I am mostly plant-based, I use it as a main dish along with some fruit and hummus bread.

The flavors are fresh and explosive with lime, cilantro, green onion, and red pepper giving the hearty and savory black beans and quinoa a delicious crunchy twist.

Superfood Black Bean & Quinoa Salad

Most people love this recipe so much they have no idea that it's vegan! It evens tastes better the day after you make it!

Ingredients
  

  • 2 cups cooked quinoa
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 clove garlic, minced
  • 1 lime, jiuced
  • 1 tsp fine sea salt
  • 1/4 tsp cayenne pepper
  • 1 15 oz. can black beans, rinsed & drained
  • 1 red bell pepper, chopped
  • 6 green onions, chopped
  • 1 handful cilantro, rough chopped

Instructions
 

  • Cook quinoa according to instructions.
  • While quinoa is cooking, whisk the olive oil, cumin, garlic, lime, salt, and cayenne together in a large bowl to let flavors marinate.
  • Rinse and drain black beans.
  • Chop veggies well.
  • Add cooked quinoa, beans and diced veggies to the bowl and gently fold it together with the dressing and cilantro.
  • Let the salad chill in the refridgerator for 30 minutes to let flavors come together. Taste best chilled or room temp.
